My favourite (my mummy's recipe) - bean paste bak kut.
Use a lot of garlic, shallots, and bean paste. Chopped until very fine.
Marinate bak kut with dark soya sauce and sugar.
Saute garlic, shallots and bean paste until aromatic, then add in bak kut.
Cook until bak kut is soft.
